how to cook chicken quickly and perfectly for a salad
Why oh why have I never cooked chicken this way before?! Please try it at least once during the summer months, you won’t regret it.
Take one chicken breast and put it on a sheet of baking paper. Sprinkle with flavourings of your choice. For example:
Salt and pepper
Garlic and lemon
Chinese five spice
Moroccan flavours
Curry powder
Cajun spices
Fold the baking paper over the chicken and bash with a mallet or rolling pin until it’s flattened. (I particularly enjoyed this part after a very challenging day).
Place a tbls of oil in a warm/hot pan and cook the chicken for 2-3 minutes either side.
The result. Tender, flavoursone chicken ready to be sliced for a warm or cold salad. I think these “chicken strips” would be perfect in a lunchbox, much easier than a drumstick and super easy to chew.
